Where did you first hear of Lyonnaise Potatoes?
Some folks saw this dish prepared on Julia Child's TV show.
Others first tasted it as prepared in the United States armed forces! The army version was included in several official cookbooks.
This particular recipe comes from Kevin Belton's Cooking Louisiana, a mighty fine cookbook that explores the cuisine of Louisiana parish by parish, including all kinds of local and regional specialties you might not find in your average Southern cookbook.
What's wonderful about this dish is that it's so simple, it has just six ingredients: potatoes, butter, onions, salt, pepper, and parsley.
The name of the recipe comes from the city of Lyon, in France. It's a classic French recipe, so Lyonnaise is pronounced lee-uh-nayz.

Lyonnaise Potatoes
Ingredients
- 3 large baking potatoes
- 6 tablespoons butter divided
- 2 onions sliced
- 1 tablespoon kosher salt divided
- 1 teaspoon ground black pepper divided
- ¼ cup flat-leafed parsley chopped
Instructions
- Preheat oven to 400 degrees. Par-cook potatoes by piercing each several times with a fork or knife tip and bake until tender, about 45 minutes. Allow potatoes to cool slightly.
- Peel the potatoes, if desired, cut in half lengthwise, then cut each half into ¼-inch slices. Set aside.
- In a large skillet over medium-high heat, heat 3 tablespoons of butter until melted. Add half of the potatoes and sauté until light brown, 4–5 minutes. Add half of the onions and a little salt and pepper, then continue cooking until potatoes are a golden brown and onions are just cooked through, 7–8 minutes. Remove from pan and set aside to keep warm. Repeat the process with the remaining butter, potatoes, onions, salt, and pepper.
- When all potatoes and onions are cooked, toss with the parsley and serve immediately.
