Cookies sure can cause a lot of excitement. Especially when they are only available for a limited amount of time. Anticipation builds and order forms are filled out. They arrive to the delight of many. Hard working girls set up tables to sell them in front of popular stores. It is amazing how many are sold in a few weeks. Girl Scout cookies inspire more than just eating cookies. There are recipes created based on their varieties. Such is the case with these Chocolate Dipped Vanilla Mini Bundt Cakes.

My favorite Girl Scout cookie variety is Samoas. Tagalongs are a close second. My husband’s favorite is Do-si-dos. Choosing one when given a mission to bake a cake with or inspired by Girl Scout cookies was difficult. I had to ponder on it for a while. I kept looking at the flavor profiles and for whatever reason was completely uninspired. Then I spotted Thanks-A-Lot ones and the wheels started turning.

The simplicity of Thanks-A-Lot is what caught my attention. Buttery shortbread dipped in chocolate sounded lovely. Plus baking something to give as a thank you is always a good thing. I definitely have done that many times. So I got out my mini bundt pan because cookies are small and it seemed appropriate. I used the same basic vanilla cupcake recipe as I did for Cupcakes with a Surprise Inside. Once the cakes cooled, they went for a dip in melted chocolate.

How are the Chocolate Dipped Vanilla Mini Bundt Cakes? If you like vanilla cupcakes without a whole lot of frosting then these are for you. A thin coat of chocolate on the bottom gives a little something extra to an otherwise plain cake. I used chocolate candy melts this time. Next time I may use chocolate chips or ganache. There are many possibilities for the chocolate dip. You only need to use one that will harden because of it being on the bottom.

Chocolate Dipped Vanilla Mini Bundt Cakes for #BundtBakers

Chocolate Dipped Vanilla Mini Bundt Cakes are inspired by the Thanks-A-Lot Girl Scout Cookies. They are buttery vanilla cakes dipped in chocolate.

Ingredients

For the mini bundt cakes:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter at room temperature
  • 1 cup granulated sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 2/3 cup buttermilk at room temperature

For the chocolate dip:

  • 8 ounces chocolate candy melts Ghirardelli dark melting wafers recommended

Instructions

  1. Pre-heat the oven to 350°F. Grease and flour a mini bundt pan (6 bundts).
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Cream butter and sugar in a large bowl until light and fluffy.
  4. Add eggs and vanilla, one at a time and beat until well combined.
  5. Add flour and buttermilk alternatively beginning and ending with the flour until combined. Do not over-mix.
  6. Divide batter equally among the 6 bundt cups.
  7. Bake for 20 to 25 minutes, until tops spring back lightly when touched and a toothpick or cake tester inserted in the center comes out clean.
  8. Cool on a rack for 5 minutes then remove cakes from pan. Cool cakes completely.

For the chocolate dip:

  1. Melt the wafers according to package directions.
  2. Dip cakes into melted chocolate.
  3. Place cakes on wax or parchment paper until chocolate sets.

These are so cute! I had the toughest time deciding on a cookie too..there are just so many and I love them all, but I was feeling a little uninspired with some. I think because they are so popular and everyone is making the samoas and thin mints...so I opted for a discontinued cookie. Ha! But these sound lovely...I especially love that you dipped them in chocolate. Mmm so good! ^_^
