Refreshing Watermelon Mint Agua Fresca is the perfect spring or summer beverage. It’s made with just a few simple ingredients, and can be served nonalcoholic or made into a cocktail.

Watermelon Mint Agua Fresca

In the throes of winter, thoughts of fresh watermelon buoy me forward to the warm days of spring and summer to come.

I watch the calendar for watermelon season like a cat watches a mouse hole.  The moment an in-season watermelon appears in the produce section, I pounce.

This recipe for Watermelon Mint Agua Fresca sparked daydreams of sun-warmed porches and open-toed sandals.  It comes from Chef Sandy Sauter on behalf of Hestan and The Culinary Institute of America (CIA).

Watermelon season can start as early as March and lasts through the summer, so keep an eye out for the first fruits of the season.  Cheers!

Watermelon Mint Agua Fresca

Refreshing Watermelon Mint Agua Fresca is the perfect spring or summer beverage. It's made with just a few simple ingredients, and can be served nonalcoholic or made into a cocktail.

Ingredients

  • 1/4 cup fresh mint leaves
  • 1/4 cup granulated sugar
  • 5 cups cubed watermelon seeds removed
  • 1/4 cup fresh lime juice
  • fresh mint sprigs for garnish

Instructions

  1. In a small pot, bring 4 cups of water to a boil. Add the mint leaves and sugar. Stir until the sugar has dissolved. Transfer to a heatproof container and let chill, uncovered, for about 30 minutes. Strain into a bowl and discard the mint leaves. 

  2. In a blender, combine the mint syrup, watermelon and lime juice. Blend until very smooth and strain into a pitcher. Add 2 cups of water and stir. Pour over ice and garnish with a fresh mint sprig.

Recipe Notes

 To make this watermelon agua fresca into a cocktail, add vodka and serve in a martini glass.

You may substitute honeydew or cantaloupe for the watermelon if desired.
