How literally should I take the theme? It was what went through my mind when the Sunday Supper “No Labor” event was announced. One thing immediately popped in my head. Yet, as usual, I kept on thinking of other options. Should it be something with a few ingredients and steps? What may be easy for me could be a challenge for others. So I decided to go with my first thought and share one of the ultimate no labor recipes: One Step Vanilla Sauce.

One type of vanilla sauce is crème anglaise. It’s made with egg yolks, sugar, vanilla, and cream. Guess what? It’s also the base of ice cream. Put crème anglaise in your ice cream maker, churn, and you have rich and creamy homemade vanilla bean ice cream. So what happens when that ice cream melts? It turns back into a marvelous vanilla sauce.

What’s the trick to it being one step? It starts with one ingredient. All you need is store-bought vanilla ice cream. However, not any one will do. First and most important is to check the label for the ingredients. Do not use it if it lists guar gum or any other stabilizers. Those will cause it to not have the right consistency. You want cream to be in the list or the resulting sauce will be watery.

Any other ingredients to consider? Vanilla bean versus flavoring. Vanilla bean will give the sauce those classic little dark specks (see bottom of the pitcher in my photos). Use vanilla bean if you want those specks and flavoring if you do not.

A few more notes on the sauce: There will be a layer of foam on top after the ice cream melts. You can skim it off, whisk it in, or simply leave it. The sauce can be heated slightly on the stove or in the microwave if you want to serve it warm. Be careful and do not let it boil because it could curdle. This sauce will be thin. You will need to make one from scratch if you want a thicker sauce. And finally, add a teaspoon of brandy or flavored liqueur for extra richness (really great over bread pudding).

Recipe Notes

For best results use high quality or premium ice cream with only cream (and/or milk), sugar, eggs, and vanilla as ingredients. Do not use ice cream with guar gum or other stabilizers as ingredients.
You may need to stir or whisk the sauce after the ice cream melts or skim off any foam on top.
