Peppermint goes with the holidays. Bright red and white striped candy canes are everywhere. They are hanging on trees, stuffed in stockings, and used in countless decorations. I wonder sometimes how mint became such a part of the season. Was it the color of the canes? Or the flavor to perk up cold winter days? Perhaps one day I’ll investigate the history of it when I get curious enough. For now I’ll simply acknowledge the popularity of the flavor during the holidays. And that is why I baked this Peppermint Cappuccino Cake.

I have a confession about mint. I do not care for it and I cannot eat it either. It does not agree with my system at all. It causes my tummy to rumble in not a good way. So you are probably wondering why I would bake this cake in the first place. Well, the blame goes directly to Bundt Bakers. Mint is the theme for this month as selected by our host Laura of The Spiced Life. Plus I didn’t want to let another holiday season go by without playing with my wreath bundt pan. How is the Peppermint Cappuccino Cake? I can only base the answer on the taste of the batter (which is usually a good indication since I often prefer batter or dough over when it is finished – crazy, huh?). I figured one small taste would be okay. Anyway, it has a very strong coffee flavor (espresso actually) and an unmistakable peppermint presence in the background. I can tell it is moist from the way the crushed candies melted into the cake within moments of sprinkling it on top. I took peppermints and crushed them in the food processor and used the fine powder in the same way as confectioners’ sugar.

So what happened with the cake? It found a good home. All worked out well in the end. Be sure to check out the recipes below if you really enjoy mint. It is definitely a great lineup of festive bundt cakes. Oh, and another confession. There is one exception with me and mint. For whatever reason my system can handle it in Thai food, specifically Spicy Thai Beef Salad aka Num Tuk. Perhaps the other spices and seasonings counteract the mint. Who knows? At least it works for me.

Peppermint Cappuccino Cake

A recipe for a made from scratch peppermint cappuccino cake baked in a bundt pan and with the flavors of a popular seasonal coffee beverage.

Ingredients

  • 4 cups unbleached all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/4 cup espresso powder*
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 4 large eggs at room temperature
  • 1 cup vegetable or canola oil
  • 1 cup whole milk at room temperature
  • 1/2 cup coffee liqueur or cold brewed coffee
  • 1 teaspoon peppermint extract
  • Crushed peppermint candies or confectioners sugar for topping

Instructions

  1. Preheat oven to 325°F. Lightly grease and flour a 10- or 12-cup bundt pan.
  2. Whisk together flour, sugar, espresso powder, baking powder, baking soda, and salt in a large bowl.
  3. Add eggs, oil, and milk. Beat until combined, about 2 minutes.
  4. Add coffee liqueur and peppermint extract. Beat until combined, about 2 minutes.
  5. Pour and spread batter evenly into prepared pan. Bake for 55 to 60 minutes, or until a toothpick or cake tester inserted in the center comes out clean.
  6. Cook cake in the pan for 10 minutes. Remove cake from the pan and cool completely on a wire rack.
  7. Dust cake with crushed peppermint candies or confectioners sugar. Transfer cake to a serving plate.

Recipe Notes

*If you cannot find espresso powder you can make it by grinding instant espresso granules into a powder by processing it in a food processor fitted with a knife blade.
