Mix sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
Pour into pie shell.
Bake in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.
Pie crust note: If you have a regular pie crust but not a deep dish pie crust, leave out a little pie filling so that the pie doesn't bubble up and overflow when cooking.
Allergy note: If you are gluten free, use all gluten free ingredients and swap in a gluten free pie crust instead of a conventional pie crust. For a dairy free version, use evaporated dairy free milk, such as evaporated coconut milk.
