Creamy Potato Soup

Creamy Potato Soup is an easy small batch recipe (for two or three). It's comforting and lightly flavored with green onion and celery.

Ingredients

  • 3 medium russet potatoes peeled and cut into small cubes
  • 1 cup water plus more if needed
  • 2 green onions white and light green part only, sliced
  • 1/2 celery stalk diced
  • 1 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1 cup whole milk
  • 1/2 cup half-and-half
  • 1/4 cup unsalted butter

Instructions

  1. Place potatoes in a medium saucepan. Add enough water to just cover potatoes. Add green onions, celery, salt, and pepper.
  2. Bring to a boil, then reduce heat to medium. Cover loosely and cook until potatoes are cooked through and tender, about 20 minutes.
  3. Add milk, half-and-half, and butter. Stir and cook until butter melts.
  4. Purée with an immersion blender or in a regular blender. Garnish with sliced green onion if desired.
