Lyonnaise Potatoes

These classic Lyonnaise potatoes have just six simple ingredients – potatoes, butter, onions, salt, pepper, parsley – and can be ready in an hour!

Ingredients

  • 3 large baking potatoes
  • 6 tablespoons butter divided
  • 2 onions sliced
  • 1 tablespoon kosher salt divided
  • 1 teaspoon ground black pepper divided
  • 1/4 cup flat-leafed parsley chopped

Instructions

  1. Preheat oven to 400 degrees. Par-cook potatoes by piercing each several times with a fork or knife tip and bake until tender, about 45 minutes. Allow potatoes to cool slightly.
  2. Peel the potatoes, if desired, cut in half lengthwise, then cut each half into 1/4-inch slices. Set aside.
  3. In a large skillet over medium-high heat, heat 3 tablespoons of butter until melted. Add half of the potatoes and sauté until light brown, 4–5 minutes. Add half of the onions and a little salt and pepper, then continue cooking until potatoes are a golden brown and onions are just cooked through, 7–8 minutes. Remove from pan and set aside to keep warm. Repeat the process with the remaining butter, potatoes, onions, salt, and pepper.
  4. When all potatoes and onions are cooked, toss with the parsley and serve immediately.
