Apple Cider Hoppin John

Ingredients

  • 2 tablespoons unsalted butter
  • 16 ounces fresh collard greens
  • 3/4 cup hard apple cider or nonalcoholic apple cider
  • 3/4 cup water
  • 1 16 ounce can of black-eyed peas
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon salt

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add the butter and swirl to coat the bottom of the pan.
  2. When the butter is bubbling hot, add the collard greens. Stir to vigorously to coat the greens in butter. Fry until the collards are wilted, dark green, and less than half their original volume (about 5 minutes).

  3. Add the cider and the water. Stir. Return to a boil, cover, and lower the heat to simmer. Cook for 30 minutes, then stir. Re-cover the pot and cook for 30 more minutes.
  4. Drain and thoroughly rinse the black-eyed peas until they are very clean and no longer producing bubbles when rinsed. Add the black-eyed peas to the pot and stir. Add the sugar and the salt and stir again.
  5. Raise the heat to bring the liquid in the pot back to a boil. Boil and stir occasionally for 5 minutes, until the liquid thickens slightly.
  6. Remove the pot from the heat and leave the lid off. Let cool for 5 minutes before serving. Include some liquid from the pot with each serving.
