Ingredients

  • 1 cup quick-cooking oats
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup vegetable or canola oil
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 425 degrees F. Lightly grease a 12-cup muffin tin.
  2. Stir together oats and buttermilk in a medium bowl. Let stand for 5 minutes.
  3. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  4. Whisk together egg and oil. Pour egg mixture into bowl with oats and buttermilk. Stir to combine.
  5. Add liquid ingredients to flour mixture and stir until just moistened.
  6. Stir in chocolate chips.
  7. Divide batter equally among muffin cups. Bake for 15 to 20 minutes or until browned.
  8. Remove muffins from pan and cool completely on a wire rack.
