Chocolate Fudge Cake

Ingredients

  • 4 large eggs separated
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 2 cups granulated sugar
  • 1/4 cup cocoa powder sifted
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped pecans
  • Confectioners sugar for dusting

Instructions

  1. Do not preheat the oven. Grease and flour an 8- or 10-cup bundt pan or tube pan.
  2. Beat egg whites until stiff peaks form.
  3. Whisk together flour, baking powder, and salt in a separate bowl.
  4. In a large bowl, cream butter until light and fluffy. Add sugar, cocoa, egg yolks, and vanilla and beat until combined.
  5. Add the flour mixture in three additions, alternatively with the egg whites in two additions, mixing on low speed until just combined. Do not over mix. Batter will be thick.
  6. Stir in chopped pecans.
  7. Spread batter evenly in prepared pan.
  8. Bake at 250 degrees Fahrenheit for 1 hour and 45 minutes, or until a toothpick or cake tester inserted in the center comes out clean.
  9. Cool cake in the pan for 15 minutes. Remove cake from pan and cool completely on a wire rack.
  10. Dust with confectioners sugar if desired.
