1 1/2poundsground beefround or chuck
2tablespoonsolive oil
1cupchopped onion
1/3cupchopped green bell pepper
1garlic cloveminced
1can diced tomatoes14.5 ounces
1can kidney beans16 ounces, drained
1can tomato juice5.5 ounces
3/4cupGerman pilsner beer
6ouncesbratwurst or knockwurstchopped into bite-sized pieces
1tablespoonchili powder
1teaspoonsalt
1/2teaspoonground cumin
1/4teaspoonpaprika
1/4teaspooncayenne pepper
Instructions
Brown the ground beef in a 5-quart Dutch oven or soup pot. Drain fat from the cooked beef.
Add olive oil, onions, and bell pepper to the pot. Cook over medium heat until onions are soft and translucent, about 5 minutes.
Add garlic and cook until fragrant, about 1 minute.
Add cooked beef and remaining ingredients and stir to combine. Bring to a boil then reduce heat to a simmer.
Cover loosely and simmer, stirring occasionally, for 1 hour.
