Ham and Vegetable Frittata

A recipe for a frittata made with ham, cheese, eggs, and vegetables including onion, zucchini, and tomatoes. Serve it warm, at room temperature, or chilled.

Ingredients

  • 8 to 10 eggs
  • 1/4 cup heavy cream half-and-half, or milk
  • 1 square Land O Lakes® Sauté Express® Sauté Starter Savory Butter and Olive Oil
  • 1/4 cup chopped onion
  • 1 cup thinly sliced zucchini
  • 1 cup bite-sized ham cubes
  • 1 cup grape tomatoes sliced in half
  • 1 cup shredded cheese Cheddar or Monterey Jack, divided
  • Salt and pepper

Instructions

  1. Pre-heat the oven to 375 degrees F. In a medium bowl, whisk together the eggs and cream. Season the eggs with salt and pepper, add 1/2 cup shredded cheese, and whisk or stir to combine.
  2. In a large ovenproof skillet, heat the Sauté Express® Sauté Starter square over medium heat. Once it has melted, add the onion and cook until onion is soft and translucent. Add the zucchini and cook until the zucchini has softened, stirring occasionally. Add the ham and tomatoes and cook for 1 to 2 minutes. Add the eggs and stir to combine. Sprinkle top with remaining 1/2 cup shredded cheese. Cook for 2 minutes and then transfer pan to the oven. Bake for 20 minutes or until the eggs have set.
  3. Cool in the pan for 10 minutes then transfer frittata to a serving platter. Slice and enjoy. Leftovers can be refrigerated and served cold or re-heated.
