4fresh basil leaves
2garlic cloveschopped
1stalk celerychopped in 1-inch pieces
1small carrotchopped in 1-inch pieces
1onionchopped
1/2small green bell pepperchopped
2cans crushed tomatoes28 ounces each
1box Pomi tomato sauce17.64 ounces
2ouncestomato paste
2teaspoonssalt
1teaspoonfresh ground pepper
1/2teaspoonchili powder
2bay leaves
Instructions
Put basil, garlic, celery, carrot, onion and green pepper in a blender. Add a little water (about 1/2 cup) and blend on high until smooth. In a large soup pot or dutch oven, add blended and remaining ingredients. Stir to combine. Bring to a low boil then turn down the heat to low. Cover loosely and simmer for at least 2 hours. Stir occasionally. Taste and add more salt or pepper if needed. Remove bay leaves before serving.
Recipe Notes
For a spicier sauce add some red pepper flakes. Add browned ground beef, pork, and/or turkey to make a meat sauce. If the sauce tastes too acidic you can add unsalted butter 1 tablespoon at a time until it rounds out the flavor (1 to 4 tablespoons).
