Ingredients

  • 1 small zucchini unpeeled, grated
  • 1 Cup Unbleached All Purpose Flour
  • 1 Tsp Baking Powder
  • 3 Eggs
  • 2 Tbsp Oil
  • 2 Tbsp Grated Gruyere Cheese
  • A pinch of salt

Instructions

  1. Preheat your oven to 350F
  2. In a medium bowl, add flour and baking soda. Combine with a whisk or a fork.
  3. Add in the eggs and combine
  4. Add Gruyere and grated zucchini
  5. Divide evenly in the Madeleine pan
  6. Bake for 10 minutes
  7. Serve and enjoy
