Raspberry Almond Torte

Ingredients

  • 1 cup sliced almonds divided
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter at room temperature
  • 3/4 cup granulated sugar
  • 2 eggs at room temperature
  • 1/2 teaspoon almond extract
  • 1/2 cup raspberry preserves

Instructions

  1. Preheat oven to 350°F. Lightly grease an 8-inch round cake pan.
  2. Finely grind 2/3 cup almond slices. Whisk together ground almonds, flour, baking powder, and salt in a small bowl.
  3. In a medium bowl, cream butter and sugar until light and fluffy. Add eggs and almond extract, one at a time, beating well after each addition.
  4. Add flour-almond mixture and mix until just combined.
  5. Spread batter evenly in prepared pan. Bake until just lightly browned, about 25 to 30 minutes. Do not over-bake.
  6. Cool torte in the pan for 10 minutes. Remove torte from the pan and place on a wire rack. Cool completely.
  7. Place torte on a serving plate. Spread raspberry preserves on top. Sprinkle remaining 1/3 cup almond slices on top of preserves.
