For the salad:
2cupschopped red delicious appleunpeeled
2tablespoonsfresh lemon juice
2cupschopped cooked turkeywhite meat recommended
1cupthinly sliced celery
1cuptoasted and coarsely chopped pecans
1/2cupgolden raisins
2tablespoonsfinely chopped onion
1/3cupheavy whipping cream
2teaspoonscurry powder
3/4teaspoonsalt
1/4teaspoonpepper
1/2cupmayonnaise
For serving:
1red delicious apple
2cupswater
1tablespoonfresh lemon juice
Bibb or green leaf lettuce
1/4cuplightly toasted coconut flakes
Instructions
For the salad:
Place chopped apple and lemon juice in a large bowl. Toss to coat apple with lemon juice. Add turkey, celery, pecans, raisins, and onion. Toss to combine.
Combine cream, curry powder, salt, and pepper in a small bowl. Beat at medium-high speed of an electric mixer until soft peaks form. Fold whipped mixture into mayonnaise.
Add curried dressing to turkey mixture. Gently toss to combine. Cover and chill thoroughly.
For serving:
Core and thinly slice apple. Place slices in a bowl with water and lemon juice.
Arrange lettuce leaves on serving plates. Spoon turkey salad on lettuce. Sprinkle toasted coconut flakes on top.
Remove apple slices from lemon-water and arrange slices on plates. Discard lemon-water. Serve salads immediately.
