Ingredients

  • 4 large Idaho® russet potatoes
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 2 tablespoons Creole seasoning
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup unsalted butter melted
  • 2 tablespoons chopped fresh flat-leaf parsley for garnish optional

Instructions

  1. Preheat oven to 350°F.
  2. Peel potatoes and cut into bite-sized pieces. Place potato pieces in a large bowl.
  3. Add onion, garlic, Creole seasoning, lemon zest, lemon juice, and butter. Toss to combine.
  4. Place mixture in a lightly greased 2-quart casserole dish.
  5. Bake for 1 hour, or until potatoes are tender.
  6. Garnish with chopped parsley (if using).
