Honey Oatmeal Scotchies

These Honey Oatmeal Scotchies are a twist on the classic cookies. They are super soft, chewy, and have added goodness of honey.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup unsalted butter at room temperature
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned oats
  • 1 bag butterscotch chips 11 ounces

Instructions

  1. Preheat oven to 375°F. Line baking sheets with parchment paper or non-stick liner.
  2. Whisk together flour, baking soda, salt, and cinnamon in a medium bowl.
  3. Beat butter, brown sugar, and granulated sugar in a large bowl until creamy. Add honey and beat to combine.
  4. Add eggs and vanilla, one at a time, beating well after each addition.
  5. Add flour mixture and beat until just combined.
  6. Stir in oats and chips. Drop by tablespoons full 2-inches apart on baking sheet.
  7. Bake 9 to 11 minutes, until edges are browned and middle is still moist looking.
  8. Cool cookies on baking sheet for 2 minutes. Carefully transfer cookies to a wire rack. Cookies will be soft. Cool completely.
