Cinnamon Sugar Cookies

These slice and bake Cinnamon Sugar Cookies have a slight caramel flavor, nutty pecan edges, and are a snap to make. Bake a batch for family and friends.

Ingredients

  • 3/4 cup unsalted butter at room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup firmly packed light brown sugar
  • 1 egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans

Instructions

  1. Beat butter, sugar, and brown sugar in a large bowl until fluffy.
  2. Add egg and vanilla and beat well.
  3. Whisk together flour, cinnamon, and salt. Add to butter mixture and beat until dry ingredients are just moistened and combined.
  4. Cover dough with plastic wrap and chill for 30 minutes.
  5. Shape dough into a 12-inch log. Roll log in nuts to coat. Wrap in parchment paper and chill for at least 4 hours or overnight.
  6. Preheat oven to 350°F.
  7. Cut log into 1/4-inch slices. Place slices at least 1-inch apart on ungreased cookie sheets.
  8. Bake for 10 to 12 minutes, or until the edges just start to turn brown.
  9. Cool cookies on baking sheet for 1 minute. Transfer cookies to a wire rack and cool completely.
