Whole Grain Mixed Fruit Breakfast Bars

Ingredients

  • 1 1/4 cups uncooked rolled or old-fashioned oats
  • 1 cup chopped dried fruit
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup whole wheat flour white whole wheat or wheat pastry flour recommended
  • 1/2 cup unsalted sunflower seed kernels
  • 1/4 cup wheat germ
  • 1/2 teaspoon ground cinnamon
  • 2 large egg whites
  • 3/4 cup 2% reduced-fat Greek yogurt plain, vanilla, or fruit flavored
  • 2 tablespoons unsalted butter melted
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Lightly grease an 8-inch square baking pan. Line bottom and up 2 sides of pan with parchment paper. Allow about 1-inch overhang of paper on sides (for easier pan removal).
  2. Stir together oats, fruit, brown sugar, flour, sunflower seed kernels, wheat germ, and cinnamon in a large bowl.
  3. Lightly whisk egg whites in a medium bowl. Add yogurt, butter, and vanilla. Whisk to combine.
  4. Pour wet ingredients into dry ingredients and stir together until dry ingredients are moistened.
  5. Spread mixture evenly in prepared pan. Bake for 30 minutes or until center is set and top is lightly browned.
  6. Cool completely in pan on a wire rack. Run a knife between edge and pan on the 2 sides without parchment. Use the parchment to lift and transfer to a cutting board. Cut into bars.
