Cherry Clafoutis

Cherry Clafoutis (aka Clafouti) is a classic rustic French baked custard. It's a delightful and simple dessert made with fresh cherries.

Ingredients

  • 1 pound pitted fresh cherries
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup milk whole recommended
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/8 teaspoon salt
  • Confectioners sugar for topping

Instructions

  1. Heat oven to 350°F. Lightly butter a 2-quart baking dish.
  2. Place cherries in the bottom of the baking dish.
  3. Whisk eggs in a large bowl.
  4. Add sugar and whisk until mixture thickens and becomes lighter in color (pale yellow), about 5 minutes.
  5. Add milk and vanilla. Whisk until combined.
  6. Add flour and salt. Whisk until combined.
  7. Pour mixture over cherries.
  8. Bake 45 minutes, or until edges are puffed and center bounces back lightly when pressed.
  9. Cool slightly. Serve warm or at room temperature.
  10. Dust top with confectioners sugar just prior to serving.
