Ingredients

For the cake:

  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups unsweetened applesauce
  • 3/4 cup vegetable oil
  • 2 eggs
  • 1 cup chopped pecans

For the glaze:

  • 1/4 cup unsalted butter
  • 2 cups confectioners sugar sifted
  • Pinch of salt
  • 3 to 4 tablespoons apple juice
  • Pecan halves for garnish optional

Instructions

For the cake:

  1. Heat oven to 350°F. Lightly grease and flour a 10-cup bundt pan.
  2. Whisk together flour, sugar, cinnamon, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together applesauce, oil, and eggs in a medium bowl.
  4. Pour wet ingredients into dry ingredients.
  5. Beat until just combined and dry ingredients are moistened, about 1 minute.
  6. Stir in pecans. Pour batter into prepared bundt pan.
  7. Bake for 40 minutes or until a toothpick or cake tester inserted in the center comes out clean.
  8. Cool cake in pan for 10 minutes. Remove cake from pan and cool completely on a wire rack.

For the glaze:

  1. While the cake is baking, cook butter in a small saucepan over medium heat until light golden brown, stirring constantly.
  2. Cool browned butter completely.
  3. In a medium bowl, stir together browned butter, confectioners sugar, salt, and 2 tablespoons apple juice.
  4. Continue stirring and adding additional apple juice, a little at a time, until desired glaze consistency is reached.
  5. Spoon or drizzle glaze over cooled cake. Garnish with pecan halves if desired.
