Peanut Butter Buns

Ingredients

For the bun dough:

  • 1 1/2 cups all-purpose flour plus more if needed
  • 1 package instant yeast* 2 1/4 teaspoons
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup water
  • 2 tablespoons unsalted butter diced
  • 1 egg at room temperature

For the topping:

  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter at room temperature
  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey
  • 1/2 cup chopped peanuts

Instructions

For the bun dough:

  1. Whisk together 1 cup flour, yeast, sugar, and salt in the bowl of a stand mixer.
  2. Heat milk, water, and butter in a saucepan until it reaches 125°F (butter does not need to melt). Add to flour mixture and stir to combine.
  3. Add egg and mix using flat beater at medium speed for 3 minutes.
  4. By hand, stir in remaining 1/2 cup flour to make a stiff batter. Add a small amount of flour, 1 tablespoon at a time, as needed for a stiff batter.
  5. Cover bowl with a towel and let rise in a warm place until light and doubled, about 45 minutes.
  6. Make the topping while the dough is rising.

For the topping:

  1. Lightly grease a 12-cup muffin tin.
  2. Beat sugar, butter, peanut butter, and honey in a bowl until combined and smooth. Stir in chopped peanuts.
  3. Spoon topping equally into the muffin cups (about 1 heaping tablespoon for each cup).

For the buns:

  1. Preheat oven to 350°F.
  2. Stir down batter and spoon over topping in muffin cups. Cover with a towel and let rise in a warm place until double, about 30 minutes.
  3. Remove towel and bake buns for 20 to 25 minutes, until golden brown.
  4. Cover pan with aluminum foil and invert on a cooling rack. Serve warm or cold.
