Citrus Pecan Quick Bread

Ingredients

  • 3/4 cup granulated sugar
  • 2 teaspoons grated orange zest
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon grated lime zest
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • 2/3 cup orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon lime juice
  • 1 egg
  • 2 tablespoons vegetable or canola oil

Instructions

  1. Preheat oven to 350 degrees F. Grease and flour an 8- X 4-inch or 9- X 5-inch loaf pan.
  2. Put sugar and zests in a small bowl. Use your fingers to rub zest into sugar (it will begin to look like wet sand).
  3. Whisk together flour, baking soda, and salt in a large bowl. Add the citrus sugar and pecans and whisk to combine.
  4. Whisk together juices, egg, and oil in a medium bowl.
  5. Add wet ingredients to dry ingredients and stir until just combined.
  6. Spoon mixture into prepared pan and spread evenly in the pan.
  7. Bake for 45 to 55 minutes or until a toothpick or cake tester inserted in the center comes out clean.
  8. Cool bread in the pan for 10 minutes on a wire rack. Remove bread from pan and cool completely on a wire rack.
