Pecan Muffins

A recipe for muffins loaded with chopped pecans. It is a great treat for breakfast or an afternoon snack. The nutty flavor goes wonderfully with coffee or tea.

Ingredients

  • 1 1/3 cups all-purpose flour
  • 1 cup chopped pecans
  • 1/2 cup Morena sugar or firmly packed brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk at room temperature
  • 1/4 cup unsalted butter melted and cooled
  • 2 large eggs at room temperature
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Grease and flour a 12-cup muffin pan.
  2. Add flour, pecans, sugar, baking powder, and salt to a large bowl. Whisk to combine.
  3. Add milk, butter, eggs, and vanilla to a medium bowl. Whisk to combine.
  4. Pour the liquid mixture into the large bowl of dry ingredients. Stir until just moistened.
  5. Divide batter equally into the 12 muffin cups.
  6. Bake for 20 to 25 minutes, until light brown around the edges and a toothpick or cake tester inserted into the middle comes out clean.
  7. Invert pan to remove muffins. Serve and enjoy!
