For the Crostini
1baguette
Olive oil
Kosher salt
Fresh cracked pepper
For the Baked Goat Cheese and Tomato Sauce
4ouncegoat cheese log
1cuptomato sauce
Red pepper flakesoptional
Fresh basil or parsley for garnishoptional
Instructions
For the Crostini:
Preheat the oven to 375 degrees F. Slice the baguette into 1/4 inch slices. Place slices on 2 sheet pans. Brush slices with olive oil. Sprinkle slices with salt and pepper. Bake one sheet pan at a time for 10 minutes or until golden brown. Cool crostini on wire racks. Store in a large air-tight container or plastic zip-top bag.
Note: Make this earlier in the day or the day before. The oven needs to be at a lower temperature for baking the appetizer.
For the Baked Goat Cheese and Tomato Sauce:
Preheat the oven to 350 degrees F. Slice the goat cheese log into four 1/2 inch rounds. Place them in a low-sided baking dish, pie plate, or au gratin dish. Spoon the tomato sauce around the goat cheese. Bake for about 20 minutes until the sauce is bubbly and the cheese has softened. Garnish with fresh basil or parsley if desired. Serve warm with crostini.
For a spicier sauce, stir 1/8 to 1/4 teaspoon of red pepper flakes into the tomato sauce before adding into the baking dish.
