German Cucumber Salad

A German-style cucumber salad made with thinly sliced cucumbers and dress with oil, vinegar, and sour cream.

Ingredients

  • 2 seedless cucumbers long English
  • 1 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 3 tablespoons white vinegar
  • 3 tablespoons vegetable canola, or extra-light olive oil
  • 2 tablespoons sour cream

Instructions

  1. Peel and thinly slice cucumbers using a mandolin or slicer side of a box grater. You should have about 3 to 4 cups of cucumber slices. Place the cucumber slices in a bowl and stir in the salt. Refrigerate for 1 hour. Drain liquid from the cucumbers using a strainer or colander and place the cucumber slices back in the bowl. Add pepper and vinegar and stir. Add oil and stir. Add sour cream and stir. Enjoy!
