1head red cabbage
1medium apple; peeledcored, and diced
1small onionfinely chopped
3/4cupwaterplus more if needed
1/3cupwhite or apple cider vinegar
2tablespoonsgranulated sugar
1tablespoonvegetable or canola oil
1teaspoonsalt
1/2teaspoonpepper
Instructions
Remove the core and any wilted outer leaves from the cabbage. Shred cabbage.
Place all ingredients in a large (7 to 8 quart) Dutch oven or soup pot. Stir or toss to combine.
Bring to a boil then reduce heat to low to simmer. Cover and cook for 1 1/2 hours, stirring occasionally. Add water in 1/4 cup increments if needed during cooking process. There should always be a small amount of liquid in the bottom of the pot.
