German Braised Red Cabbage

Ingredients

  • 1 head red cabbage
  • 1 medium apple; peeled cored, and diced
  • 1 small onion finely chopped
  • 3/4 cup water plus more if needed
  • 1/3 cup white or apple cider vinegar
  • 2 tablespoons granulated sugar
  • 1 tablespoon vegetable or canola oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Remove the core and any wilted outer leaves from the cabbage. Shred cabbage.
  2. Place all ingredients in a large (7 to 8 quart) Dutch oven or soup pot. Stir or toss to combine.
  3. Bring to a boil then reduce heat to low to simmer. Cover and cook for 1 1/2 hours, stirring occasionally. Add water in 1/4 cup increments if needed during cooking process. There should always be a small amount of liquid in the bottom of the pot.
