Amaranth Banana Nut Quick Bread

Ingredients

  • 1 cup white whole wheat flour
  • 1 cup unbleached cake flour
  • 2 teaspoons baking powder
  • 1/2 cup chopped walnuts
  • 1 cup mashed ripe bananas about 3 bananas
  • 1/2 cup honey
  • 2 large eggs at room temperature
  • 3 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 cup cooked amaranth at room temperature

Instructions

  1. Preheat oven to 350°F. Lightly grease a 9- X 5-inch or 8- X 4-inch loaf pan.
  2. Whisk together whole wheat flour, cake flour, baking powder and walnuts in a large bowl.
  3. Whisk together bananas, honey, eggs, butter, and vanilla in a medium bowl. Add amaranth stir or whisk until combined.
  4. Pour liquid ingredients into dry ingredients. Stir until dry ingredients are moistened.
  5. Pour batter into loaf pan. Bake for 1 hour or until a toothpick or cake tester inserted in the center comes out mostly clean. It is a moist bread so there may be a little that clings to the tester.
  6. Cool bread in pan for 10 minutes. Remove bread from pan and cool completely on a wire rack.
