Ingredients

For the honey tangerine dressing:

  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • 1 small garlic clove minced
  • 1 1/2 teaspoon chopped shallot
  • 1/3 cup fresh tangerine juice
  • 1 tablespoon white wine vinegar
  • Pinch of salt and pepper
  • 2/3 cup olive oil

For the spinach salad

  • 5 ounces fresh baby spinach leaves
  • 1/2 red onion thinly sliced
  • 1/2 tart green apple thinly sliced
  • 1/4 cup feta cheese crumbles
  • 2 tablespoons toasted pine nuts

Instructions

For the honey tangerine dressing:

  1. Place mustard, honey, garlic, shallot, tangerine juice, vinegar, salt and pepper in a blender. Blend on high speed until combined.
  2. Turn blender to low speed and slowly drizzle in olive oil.
  3. Pour dressing into serving container. Chill when not serving.
  4. Bring to room temperature if serving after being chilled. Dressing will separate. Shake to blend again.

For the spinach salad:

  1. Place the spinach in a large salad bowl or divide evenly into single serving bowls.
  2. Tops with red onion, apple slices, feta cheese, and toasted pine nuts.
  3. Serve with honey tangerine dressing.
