3/4cupunsalted butterat room temperature
1/3cupgranulated sugar
1/3cupfirmly packed light brown sugar
1eggat room temperature
1teaspoonvanilla extract
1 3/4cupsall-purpose flour
1teaspoonground cinnamon
1/4teaspoonsalt
1/2cupfinely chopped pecans
Instructions
Beat butter, sugar, and brown sugar in a large bowl until fluffy.
Add egg and vanilla and beat well.
Whisk together flour, cinnamon, and salt. Add to butter mixture and beat until dry ingredients are just moistened and combined.
Cover dough with plastic wrap and chill for 30 minutes.
Shape dough into a 12-inch log. Roll log in nuts to coat. Wrap in parchment paper and chill for at least 4 hours or overnight.
Preheat oven to 350°F.
Cut log into 1/4-inch slices. Place slices at least 1-inch apart on ungreased cookie sheets.
Bake for 10 to 12 minutes, or until the edges just start to turn brown.
Cool cookies on baking sheet for 1 minute. Transfer cookies to a wire rack and cool completely.
