Ingredients
For the rosemary olive oil:
1cupolive oil
8sprigs fresh rosemaryabout 4-inch long sprigs
For the dressing:
1tablespoonwhite wine vinegar
1teaspoonchopped fresh thyme leaves
1/2teaspoonDijon mustard
1/2teaspoonhoney
1/8teaspoonfresh ground black pepper
3tablespoonsrosemary olive oil
For the salad:
1poundfresh strawberrieshulled and thinly sliced
1green onionwhite and light green part only, thinly sliced
1tablespoonfresh snipped chives
2teaspoonschopped fresh parsley
Edible flowers for garnishoptional
Instructions
For the rosemary olive oil:
Place olive oil and rosemary in a small saucepan. Heat until warm, between 120° and 145°F. Do not allow to boil.
Remove from heat and cool to room temperature. Transfer oil and rosemary to a container. Cover tightly and store at room temperature.
Best made a few days in advance. Use within 30 days.
For the dressing:
Whisk together vinegar, thyme, mustard, honey, and pepper in a small bowl. Slowly drizzle in oil while whisking constantly.
For the salad:
Place strawberries in a serving bowl. Drizzle part or all of dressing over strawberries (a little goes a long way). Toss gently to coat strawberries with dressing.
Top with green onion, chives, and parsley.
Garnish with edible flours if using.
