Tart Cherry Oatmeal Cookies

Ingredients

  • 14 tablespoons unsalted butter at room temperature
  • 3/4 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups uncooked old-fashioned oats
  • 3/4 cup chopped dried tart cherries
  • 1/4 cup finely chopped pecans

Instructions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper or non-stick liner.
  2. Beat butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
  3. Add eggs and vanilla and beat well.
  4. Whisk together flour, cinnamon, baking soda, and salt. Add to creamed mixture and beat until just combined.
  5. Stir in oats, cherries, and pecans.
  6. Drop by rounded tablespoonfuls 2 inches apart on baking sheets.
  7. Bake for 10 minutes, or until light golden brown on the edges.
  8. Cool cookies on baking sheet for 1 minute. Carefully transfer cookies to a wire rack and cool completely.
