White Bean Balsamic Tomato Salad

Fresh picked tomatoes are a highlight of the summer season. A juicy tomato bursting with flavor is one thing I look forward to each year. I absolutely love the heirloom varieties. You might wonder why I do not grown them. Well, I have tried. I do not have a garden in my yard. I grew them successfully in containers for a few years until a tree over my deck made it too shady. So it is not in the cards for me to grow tomatoes.

Fortunately there are farmers markets. This year the tomatoes have been plentiful. One of the vendors has the most beautiful heirlooms. Their flavor really shines in a simple salad. One of my favorites to make is a White Bean Balsamic Tomato Salad. The combination of balsamic vinegar and tomatoes is delightful. Add that to a bed of mixed greens along with white beans and you get yummy!
