What to do for holiday gifts? That was a real dilemma for me years ago when I worked in a big office. I had about 20 co-workers and everyone exchanged gifts. I was on a tight budget and did not want to give some cheap-o thingy. I searched the stores and had no luck. Then it occurred to me to make homemade treats. The gifts were a hit and I got rave reviews on the Rocky Road candy. The combination of marshmallows, peanuts, and chocolate is so incredibly good.

I have made lots of holiday treats since then. There are my standard ones like Tiger Butter, fudge, Rocky Road, and fruitcake (yes, fruitcake and it is a good one). I also seek out new ones to try each year. As luck would have it, today's Sunday Supper event is all about gifts from the kitchen. I could not be more happy about it. Rocky Road Candy

A recipe for Rocky Road candy made with chocolate, marshmallows, and roasted peanuts. A treat great for the holidays and to give as homemade gifts from the kitchen.

Ingredients

  • 10 ounces miniature marshmallows
  • 2 cups dry roasted peanuts
  • 12 ounces semisweet chocolate chips
  • 14 ounces sweetened condensed milk
  • 2 tablespoons unsalted butter

Instructions

  • Line a 9- X 13- X 2-inch baking pan with parchment or wax paper and set aside.
  • In a large bowl, add the marshmallows and peanuts. Stir to mix together.
  • In the top of a double boiler, add the chocolate chips, sweetened condensed milk, and butter. Bring water in the bottom of the boiler to a simmer and place the top boiler over it. Cook, stirring constantly, until chocolate and butter melts and the mixture is smooth.
  • Pour the chocolate over the marshmallows and peanuts. Stir to coat evenly. Transfer the mixture to the baking dish and spread evenly, pressing down as needed. Refrigerate for at least 3 hours. Cut into 1 inch square pieces.

  8. Yes, I know the dilemma very well (plus I work with a bunch of men, so it can't be too cutesy). Rocky road fudge is my mom's favorite thing, so I may be stuffing her stocking with this!

  9. The first time I made homemade gifts it was for my husband's work party. It was a white elephant gift exchange and I made Peanut Butter Truffles. Lets just say I felt a little guilty when there was a fight over who got the truffles. 🙂
