Peanut Butter Banana Smoothie

Thick, creamy, and with just the right amount of sweetness, this peanut butter banana smoothie is gluten free, dairy free, and delicious!  It tastes like a peanut butter banana milkshake!

Peanut Butter Banana Smoothie

I love to support a good cause.  When A Spoon Full of Hope and Second Harvest Food Bank reached out to ask if I’d create a recipe to help support their Culinary Training Program for at-risk and economically disadvantaged adults, I said “I’m in!”

The Second Harvest Culinary Program provides participants no-cost culinary and life skills training to pursue a sustainable career in the food industry.  All proceeds from the product line—which includes honey, cookies, and tomato soup—go directly into the program.  Local Orlando residents can even order boxed lunches for pickup through the program.

I was asked to create a recipe using their honey or tomato soup.  Can you guess which one I chose?  With my love of all things bee-related, of course I picked honey.  I chose to highlight the honey in a smoothie recipe.  This peanut butter banana smoothie will power you through the day.

By using honey in a smoothie, you can actually taste the flavor of the honey itself.  It isn’t hidden in a marinade, or (heaven forbid) cooked, or diluted to the point where you might as well use any sweetener.  No, this peanut butter banana smoothie allows the honey to shine.  If you’re a honey connoisseur like me, you’ll appreciate the nuances of the honey variety.  A Spoon Full of Hope honey comes in orange blossom, wildflower, and palmetto honey varieties.

You can vote for your favorite recipe!  All the recipes created for this campaign will be featured on A Spoon Full of Hope social media pages, where you can vote to select a fan favorite.  In addition to the fan favorite contest, all the recipes will be prepared by the Culinary Training Program and judged by local chefs and celebrity judges.  The winning recipe will be featured in the Fall issue of Edible Orlando.

Peanut Butter Banana Smoothie

Thick, creamy, and with just the right amount of sweetness, this peanut butter banana smoothie is gluten free, dairy free, and delicious!  It tastes like a peanut butter banana milkshake!

Ingredients

  • 1/4 cup creamy peanut butter
  • 1/2 cup ice
  • 1 frozen banana cut into chunks before freezing
  • 3/4 cup coconut milk beverage
  • 2 teaspoons honey

Instructions

  1. Combine all ingredients and blend until smooth, about 60 seconds. Tap the container bottom on the counter and swirl a few times to release air bubbles. Serve immediately.

Serves one person as a meal replacement, or two people as a snack.
