There they were at the end of the shed. Two guys sitting behind two tables. On those tables were baskets of peaches. I pulled over and had to check them out. Then I caught a whiff of their aroma. Yet I wasn’t convinced to get them. One of the guys cut a peach and gave me a bite. That’s all it took. I came home with a bushel of peaches and the first thing I made was Peach Pancakes with Peach Maple Syrup.

Georgia peaches are a divine treat. Well, when it is a good season. Every now and then Mother Nature isn’t kind to the trees. She must have been beyond good to the trees this year. The peaches I bought were the best I’ve had in a while. The closest was the year I made Peaches and Cream Martini.

Fresh Peaches in Baskets

The pancakes are a variation of a classic. I took my old faithful buttermilk pancake recipe and gave it a twist. I added cinnamon and ginger because those spices pair beautifully with peaches. Instead of stirring chopped peaches into the batter, I used slices. The peaches caramelize as they cook on the griddle. It makes the soft with a thin dark sugary coating.

Regular plain syrup for the pancakes would be okay. Yet a thick, rich, peachy syrup is the way to go. So I blended up fresh peaches with maple syrup and spices. Then I cooked it for a few minutes to get it silky smooth. I’ve never wanted to eat syrup by the spoonful until now. It’s heavenly.

Peach Pancakes showcase fresh summer fruit. You’ve got caramelized peaches inside, silky smooth peach syrup on the outside. Then serve it with fresh peach slices. While you are at it, a dollop of whipped cream needs to be on the plate too. Why? Because peaches and cream are meant to be together.

Peach Pancakes with Peach Maple Syrup

Peach Pancakes with Peach Maple Syrup are made with fresh peaches and a hint of spice. It's a delightful breakfast with summer fruit inside and out.

Ingredients

For the peach maple syrup:

  • 4 medium fresh peaches
  • 1 cup maple syrup
  • 2 tablespoons unsalted butter
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger

For the peach pancakes:

  • 1 medium fresh peach
  • 2 teaspoons fresh lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1 cup plus 2 tablespoons buttermilk
  • 1 large egg
  • 1 tablespoon vegetable oil

For serving:

  • Fresh peach slices
  • Whipped cream

Instructions

For the peach maple syrup:

  1. Peel peaches and cut in half. Remove and discard pits. Chop peaches.
  2. Place peaches and all remaining syrup ingredients in a blender. Blend until smooth.
  3. Pour into a medium saucepan. Bring to a boil then reduce heat to medium-low.
  4. Cook, stirring often, for 5 minutes.
  5. Syrup is best made just prior to serving. It will become browner in color the longer it sits.

For the peach pancakes:

  1. Peel the peach and cut into 16 thin slices (remove and discard pit). Drizzle lemon juice over slices and toss to coat.
  2. Whisk together flour, sugar, baking soda, salt, cinnamon, and ginger in a large bowl.
  3. Whisk together buttermilk, egg, and oil in a medium bowl. Pour into dry ingredients and stir until batter is mostly combined. There can be some small lumps.
  4. For each pancake, place 2 peach slices next to each other on a hot, lightly greased griddle over medium-high heat. Pour about 1/4 cup batter on top of peaches.
  5. Turn pancakes when tops begin to have bubbles and edges look dry and cooked.
  6. Cook on the other side until bottom is lightly browned.
  7. Serve pancakes warm with peach maple syrup, fresh peach slices, and whipped cream.
