Fruit & Nut Snack Mix Bark

Homemade holiday gifts are the best. They are treasured items from the heart and soul. How great to receive a gift that someone took their time and energy to create! You really do appreciate and remember them for a long time.

A box of homemade treats is always a hit for foodies. This fruit & nut snack mix bark is not only delicious but also pretty. Depending on the mix you use, it can reflect the season with the colors. The white base is like a snow covered ground. Red dried cranberries, green pistachios, yellow dried pineapple, and the browns of chocolate and nuts all mixed together to make a festive candy. Who would not want that?

There are many different fruit & nut snack mixes in the store. They are usually found in the nut or produce section. You can also make your own mix. For this batch I used a couple of the ReCharge™ Naturally Enhanced Snack Mixes by Tropical Foods. Might as well throw in a bit of healthy energy into a holiday candy. Everyone could use a extra boost during the busy holiday season.

Gift packaging is easy. Even a craft challenged person like myself can do this. Go to a craft store and you can find small gift boxes, holiday parchment, treat bags, ribbon, and tags all in the same place. The recipe is quick and easy too. Also good for little helpers in the kitchen.

Take the time to make some gifts. Spread the love to your friends and family. Save a few to enjoy yourself too. Happy Holidays!

Fruit & Nut Snack Mix Bark

1 pound (16 ounces) white candy coating or white chocolate
3 cups fruit & nut snack mix

Line a 10″ x 13″ baking sheet with non-stick aluminum foil or parchment. (I prefer the non-stick foil). Melt the white candy coating or white chocolate in a bowl in either the microwave or over simmering water.

If using the microwave: cook on high for 15 seconds and stir. Continue at 15 second intervals until melted and smooth. Be careful and do not burn.

If over simmering water (double boiler): Stir until melted and smooth.

Using a rubber or silicone spatula, spread melted candy coating or white chocolate evenly on lined baking sheet. Sprinkle snack mix on top. Using your hands, press mix into the candy. Refrigerate for at least 30 minutes to harden. Remove bark from baking sheet and break into pieces.

Thank you! It is so easy and quick. The great thing is you can make your own mix and version. Use all your favorite nuts and dried fruits.
