Things have been quite rice-y around here lately. It’s all Milo’s fault. Our sweet puppy had to go on a chicken and rice diet for a while. Switching his food has been a challenge. I’ve made more rice in the last month than I’ve made in 10 years. Next thing I know I was craving a sweet one I hadn’t had in a while. That’s why I made these Double Peanut Butter Rice Krispie Treats.
Oh the simple pleasure of a rice krispie treat. It was something I was reminded of when I made toffee chip ones a few months ago. I had an inkling to make a springtime or Easter batch. I envisioned pastel colors and Easter candy. Then I did an internet search. Oh my. All I can say is there sure are some creative folks out there. So I decided to switch gears.
Flavor was the next target. Peanut butter always works. I decided to double it up and use both the spread and chips. However note it’s hard to see the peanut butter chips in the treats. They are in there though. It’s just an extra little punch of flavor in there for your pleasure. Double Peanut Butter Rice Krispie Treats were a big hit at my husband’s work. He told me they got rave reviews.
Milo is incredibly spoiled rotten. He’s also afraid of everything. I mean everything. Every. Single. Thing. He’s not used to people and runs from them. I think he spent his first five months in a crate. It’s like he wasn’t exposed to anything. It’s so strange he doesn’t seem to know how to be a puppy in some ways. Yet each day there are little steps forward. He’ll get to being a regular ‘ole whippet one day.
Milo to rice to krispie treats to peanut butter. It’s interesting how events changes things and takes us to new adventures. Now I have a half of a package of peanut butter chips to use. Double Peanut Butter Rice Krispie Treats
Ingredients
- 6 cups rice krispies cereal
- 1 cup peanut butter chips
- 1/4 cup unsalted butter
- 1 package mini marshmallows 10 ounces
- 1/2 cup creamy peanut butter
Instructions

Line a 13- X 9-inch baking pan with non-stick aluminum foil (for easier removal) or simply butter the pan.

Combine cereal and peanut butter chips in a large bowl.

Melt butter in a medium saucepan over medium-low heat. Add marshmallows and cook, stirring constantly, until marshmallows have completely melted and mixture is thoroughly combined.

Add peanut butter and continue to cook and stir until combined and smooth.

Pour melted marshmallow mixture over cereal and stir to coat completely.

Press mixture into prepared pan. I used another piece of non-stick foil to easily press it down without sticking.

Cool to room temperature. Cut into 24 squares.
