
Thanksgiving is right around the corner. It will be here before you know it. Then comes all the holiday parties, Christmas, New Years, and more. I think of all the food for holiday feasts and there is one that I cannot do without. It is simple and yet oh so special - cream cheese and pimento stuffed celery. It goes wonderfully with turkey, ham, corn, potatoes, beans, cranberry salad, sweet potatoes, and more.
Why is stuffed celery so special to me? Because my dad would make it for holiday meals. Actually, my mom and dad would make it together. Mom would clean and cut the celery. Dad would mix the cream cheese and pimentos then spread it on the celery. They always put them on this one glass serving dish which I hoped would be near my plate on the table.
I have cooked many family holiday meals. Each time my parents would ask what they could bring. The answer was always dad's cream cheese and pimento stuffed celery. They would bring it in the same glass dish and at my house I made sure it was near my plate. I kept all the leftovers too. They make an excellent snack. You can also serve them as an appetizer.
Memories of my dad are kept alive with making his recipes. He was a great cook and I'm glad I learned so much from him. I will make stuffed celery and he will be at the table in spirit. What recipe reminds you of your dad? Make it soon and be sure to write it down for the generations to come.

Cream Cheese and Pimento Stuffed Celery
Ingredients
- Celery stalks
- 3 ounces cream cheese at room temperature
- 1 to 1 ½ tablespoons diced pimentos
Instructions

Clean and cut celery stalks into 3- or 4-inch pieces.

In a small bowl, stir together the cream cheese and pimentos.

Fill the celery with the cheese mixture. Serve and enjoy. Refrigerate leftovers.

That's the alternative to just making a cream cheese dip and start dipping the celery in it. That way you guarantee that the cream cheese is evenly divided.
