Chocolate Dipped Strawberries

What is it about chocolate dipped strawberries that makes them so tempting?  Is it the red hue of the strawberry peeking out at the top?  Is it the sheen of the chocolate?

I like to play it safe and vote all of the above.

Or perhaps it's that they look so delightfully fancy, yet are very simple to make.

All you have to do is melt chocolate, dip the strawberries, then chill them briefly so the chocolate can set.  What could be easier?

Choose Your Chocolate

For simplicity's sake, I used semi-sweet chocolate chips, just like you would use in chocolate chip cookies, to make these.  You can use almost any kind of ready-to-eat dark chocolate. 

Milk chocolate can work, but it doesn't always get as firm as dark chocolate, so you'll have to experiment and see what works if you like a lighter hue of chocolate.

Choose Your Berries

Are you lucky enough to live near a farmers' market?  If so, ripe local strawberries are ideal for this recipe. 

Otherwise, pick the best your grocery store has to offer.  Since it's such a simple recipe, the flavor of the strawberries will truly shine.

Prepare Your Berries

The secret to making this easy recipe work perfectly is to make sure your strawberries are completely dry.  If water gets into the chocolate, it can seize up.  So make sure you really dry off the berries after washing them. 

If you're using them straight from the fridge, they can quickly develop a layer of condensation.  To prevent this, I give each strawberry a quick wipe right before I dip them.

Chill Out

To make the coating fully firm, chill them for 30 minutes.  I secretly enjoy mine a little on the softer side.  Sometimes I chill them for just 10 or 15 minutes, enough to make the chocolate stick but also to be a little soft.

Chocolate Dipped Strawberries

Ingredients

  • 1 cup chocolate chips
  • 12 strawberries

Instructions

  • Rinse the strawberries and dry them very well. Prepare a tray or large plate by lining it with parchment paper or wax paper.
  • Microwave the chocolate chips on 30% power for 5 minutes, stopping occasionally to stir. When mostly melted, stir until completely melted and smooth.
  • Hold a strawberry by the green stem and dip it in the melted chocolate. Let any excess chocolate drip back into the bowl. Place the strawberry on the paper.
  • Repeat with remaining strawberries. If the chocolate becomes stiff, you can return it to the microwave for a few seconds to reheat.
  • Chill the dipped strawberries for 30 minutes to harden the chocolate coating.
