Boxes are stacked in every room. It is a seemingly unending process. We started with a small portion of it weeks ago. Then the time for the big move arrived so quickly. Moving my mom into her new home is quite a task. The move takes a lot of time and there is little left for things like cooking. Meals at home are either takeout or something taking minimal effort like Barbecue Pulled Pork Tacos.
The effort depends on a few variables. It could take a lot of time and effort if you do everything from scratch. It does take hours in a smoker or slow-cooker to get a pork butt pull-apart tender. It is a different story if you have leftovers or pick up some from a barbecue restaurant or grocery store. Cole slaw only takes minutes to mix or you can eliminate that time by getting it along with pulled pork. Ditto for corn.
I thought I had leftover pork in my freezer. It wasn’t too long ago I made Crock Pot Pork Barbecue. I went to get it out only to discover I had already used it. I asked my husband to pick up some pulled pork at a local barbecue place. I went to the grocery store and got cabbage to make creamy cole slaw, plus soft taco shells, and fresh jalapeño peppers.
How to make the tacos? It’s super simple. Put pulled pork on a taco shell. Drizzle your favorite barbecue sauce on top (or you could mix the pork and sauce together before putting it on the shell). Then spread cole slaw over the pork. Scatter corn and sliced jalapeño on top. That’s it. You have soft tacos filled with savory pork, spicy sauce, creamy slaw, sweet corn, and hot pepper. It’s a tasty southern twist to tacos.
Moving is not an easy task. Downsizing can be difficult and a struggle to let go of objects held on to for decades. I see how hard it is on my mom. At least we are there to help her through it all. We know she will be much happier in her smaller home in a lovely neighborhood filled with people her age. Meanwhile, patience and strength is needed to get this move done. Some good food along the way helps too.
Barbecue Pulled Pork Tacos
- 8 soft taco shells
- 1 pound pulled pork warmed
- 1/2 to 3/4 cup barbecue sauce
- 1 cup coleslaw
- 3/4 cup cooked corn kernels
- 1 to 2 jalapeño pepper thinly sliced
Place 2 ounces pulled pork on each taco shell. Drizzle barbecue sauce on pork.
Place 2 tablespoons coleslaw on top of pork. Sprinkle corn kernels and scatter jalapeño slices on top.
Amounts of ingredients are approximate. Use your judgement on how much of each for each taco. Increase or decrease as desired.
