All things Italian food seem to be in my life lately. There must be something in the air. It’s been with meals I’ve made, my family has made, or eaten out. My sister-in-law made wonderful lasagna this past weekend for my cousin’s birthday celebration. It was Italian week at my local grocery store recently. I have a pasta recipe in the works. Then I needed a super quick and easy meal and came up with Sausage Onion Flatbread Pizza.

There are two reasons I went with flatbread. One is because of I’ve always enjoyed it as a lighter meal. I’ll order it when I’m hungry but not real hungry. The only thing is when I’m at a restaurant there are limited choices. I wish I could order it like at a pizza place and choose the toppings. The other reason is because I keep seeing all these awesome flatbreads by my friend Isabel of Family Foodie. She’s been kicking up my cravings for it like crazy.

Pre-made flatbread is a real time saver. One thing that has stopped me from making flatbreads at home is the time involved in the dough. Plus I have to admit it is challenging to get pizza dough extra thin. It’s a breeze to open the package and then get creative with the toppings.

Sausage Onion Flatbread Pizza has kick and crunch. I used spicy Italian sausage and sliced red onion on top of a rich tomato pizza sauce. Campari tomatoes had to go on it because they looked so darn red and beautiful when I saw them in the store. Mozzarella cheese melted on top holds it all together. A light final touch of fresh thyme leaves sprinkled on top after baking gives it a certain freshness. Besides, a little something green is a good thing.

Do you enjoy Italian Food? Obviously I do. I like all the varieties and styles from the different regions in Italy. One day I’ll take the leap and make my own pasta. I do need to get a pasta machine first. Until then I’ll just keep on with taking advantage of what is in the store. A couple of my favorites are risotto or simply spaghetti and meat sauce. There’s another Italian dish coming here soon so stay tuned…

Sausage Onion Flatbread Pizza

Sausage Onion Flatbread Pizza is a quick and easy appetizer or main dish. Spicy Italian sausage, red onion, tomato, and cheese are a marvelous combination.

Ingredients

  • 1 spicy Italian sausage link 4 ounces, casing removed
  • 2 pre-made flatbreads
  • 6 tablespoons pizza or marinara sauce
  • 1/4 cup thinly sliced red onion
  • 2 campari tomatoes thinly sliced
  • 4 ounces shredded mozzarella cheese
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat oven to 375°F.
  2. Brown sausage in a skillet over medium-high heat, stirring and breaking up while browning with a spoon or spatula. Remove from heat.
  3. Place flatbreads on a baking sheet. Bake for 2 minutes.
  4. Spread sauce on flatbread. Sprinkle sausage on sauce.
  5. Top with onion, tomato, and cheese.
  6. Bake for 7 to 11 minutes, or until cheese is melted and starting to bubble.
  7. Sprinkle thyme on top.
  8. Cut flatbreads into slices. Serve immediately.

These flatbreads look fantastic, Renee! I like them because you're not getting quite as many carbs as with pizza. Great combination of ingredients!
