Simple dishes can be quite memorable. Those memories can start during childhood and stay parked in the back of the mind for the longest time. Such is the case with this one particular thing my dad would make long ago. I remember it vividly even though I have not eaten it in over 35 years. He would stand by the oven watching over it broiling and take it out right at the perfect time. It’s the inspiration behind Potato Topped Sloppy Beef Skillet.

The recipe my dad used was very simple. It was very bland too. Why such a bland dish could resonate with me is inexplicable. The combination of beef, tomatoes, and potatoes must have done it. I’ve thought about recreating it over the years and spicing it up some. Yet it never made it to the top of the to-do list until now. I had the right opportunity when a package of McCormick skillet sauces arrived at my door.

There are seven flavors of McCormick’s skillet sauces. I looked at the packages and the Sweet & Smoky Sloppy Joes immediately made me think of that potato topped skillet meal my dad would make. It would be perfect to use it instead of a can of plain tomatoes. I knew my instincts were spot on the moment I tasted it.

Potato topped sloppy beef skillet is easy to make. Prepare the sloppy joe mixture as directed on the sauce packet. Thinly slice a russet potato and arrange those slices on top. Cover it and bake until the potatoes are cooked. The last step is a quick broiling to brown the potatoes. I served it with a simple green salad and then had some Quadruple Chocolate Shortbread Cookies for dessert.

McCormick’s skillet sauces make for easy meals. Three short steps is all it takes to prepare them with meat or vegetables. Or you can use them to invent your own version as I did with this recipe. The sauces are made with all-natural herbs and spices. I’m looking forward to trying all of them especially on those super busy days when a quick to prepare meal is needed.

Potato Topped Sloppy Beef Skillet

Potato Topped Sloppy Beef Skillet is an easy to prepare meal. Beef sloppy joe mix is topped with potato slices and browned under the broiler.

Ingredients

  • 1 pound ground beef
  • 1 package McCormick Sweet & Smoky Sloppy Joes Skillet Sauce
  • 1 large russet potato

Instructions

  1. Preheat oven to 375°F
  2. Brown ground beef in a skillet over medium-high heat. Drain grease from beef and return beef to the skillet.
  3. Stir in skillet sauce and bring to a boil. Reduce heat to low to simmer.
  4. Peel and thinly slice potato (between 1/8-inch and 1/4-inch thickness). Arrange potato slices over sloppy joe mixture.
  5. Cover skillet and place in the oven. Cook until the potatoes are tender, about 30 minutes.
  6. Remove skillet from oven and switch oven to broil.
  7. Remove cover and place skillet under broiler. Broil until potatoes are lightly browned, about 3 to 5 minutes.
