It is a cross between a sound and a smell. I’m not sure which one I look most forward to in the morning. I press the coffee maker buttons and there’s a whoosh sound from coils heating up water. Then a drip as magic elixir comes out of the filter. Heavenly aroma of coffee fills the air after the whoosh. Which one I like better? I’m not sure. What I am sure of is how much I enjoy taking the first sip. It’s a bonus to have it with Honey Nut Oatmeal Waffles. What a wonderful morning indeed.

It was time to play with my waffle iron again. I admit I’ve been looking for excuses to use it. Bread Bakers gave the perfect opportunity. All I had to do is bake bread with oats. Well, waffles definitely qualify. Then it came down to figuring out which waffles. Should they be oatmeal raisin or blueberry or cinnamon, nut, or chocolate chip? I went with nut and because my all-time favorite waffles are pecan.

As usual, the recipe search began. I looked in the waffle iron instruction manual. Most of the time small appliance manuals have recipes included. There were a couple then it gave instructions to mail in a form to receive a full booklet. Considering how old it is I am certain the booklet is no longer available. I tried the manufacturer’s website to no avail. Anyway, my next step was looking through my dependable cookbooks. I found one in the first book I pulled out of the bookcase.

Healthy and hearty is what caught my attention. Honey Nut Oatmeal Waffles are made with whole grains, oats, and nuts. It called for whole wheat flour and I used white whole wheat because I wanted them be as close to a traditional golden color as possible. How do they taste? Oat-y, nutty, with a denser texture than traditional waffles yet not too heavy. Honey gives them a slight sweetness and added flavor. Serve them with fruit and syrup or your favorite toppings.

Do you enjoy oatmeal? I do. Actually, I’m not a fan of a bowl of it. I prefer grits, cream of wheat, or oat bran. Oatmeal is marvelous as an ingredient and I bake with it often. Honey Nut Oatmeal Waffles

Honey Nut Oatmeal Waffles are a hearty and healthy breakfast. Whole grains, oats, nuts and honey start your day deliciously and keep you satisfied.

Ingredients

  • 1 1/2 cups whole wheat flour white whole wheat recommended
  • 1 cup old-fashioned oats
  • 1 cup finely chopped pecans or walnuts
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 eggs
  • 1/4 cup unsalted butter melted
  • 2 tablespoons honey

Instructions

  1. Whisk together flour, oats, nuts, baking powder, and salt in a large bowl.
  2. Whisk together milk, eggs, butter, and honey in a medium bowl.
  3. Add liquid mixture to flour mixture and stir to combine.
  4. Heat waffle iron. Lightly spray waffle iron with non-stick cooking spray.
  5. Ladle and spread 1/3 batter onto waffle iron and bake according to the manufacturer's instructions. Repeat with remaining batter.
  6. Serve waffles immediately or keep warm on a rack in the oven on the lowest heat setting.
  7. Serve with your favorite waffle toppings and sides.

I love these and make them all the time. The only change I made was to use (real) maple syrup instead of honey, since I'm not a big fan of honey. They turn out great every time!

While I do love a bowl of oatmeal, I'd much rather these waffles! I've never made waffles with nuts or oatmeal, so I need to get to work.
