It’s a festive and shimmering time of year. Everything sparkles, glimmers, and sometimes blinks too. Even technology is bumping up lighting. Have you seen light projections of falling snowflakes on houses? Wow! We thought stringing lights down the side of our driveway was cool (we did that in our first house over 20 years ago). Anyway, celebrations get bumped up with bubbly. I’ve bumped up bubbly with Ginger Lime Sparklers.

What is it about bubbly wine? Pop open a bottle and it magically brings smiles to faces. There must be something with the sound of it. The loud POP pushes out a giant bubble of happiness. You can almost see it traveling across a room. Just try to keep the cork from shooting across with it. Remember to hold the cork and twist the bottle. It’s a lesson I’ve learned after a few almost mishaps.

Ginger Lime Sparklers have a citrus zing. Ginger flavor is subtle unless you increase the amount of ginger-lime syrup. Keep in mind doing so will make it sweeter too. Lime really shines through. It matches and enhances many sparkling wine’s citrus notes. Ginger’s earthiness and warmth balances lime’s tartness. A touch of sweetness helps too.

I usually get either Prosecco or American sparkling wine though. I’ve used it to make Sparkling Summer Fruit Salad and several other cocktails too.

Ginger Lime Sparklers

Ginger Lime Sparklers are a festive cocktail with sparkling wine, ginger-lime syrup, and fresh lime juice. Make them for your next party.

Ingredients

For the ginger-lime syrup:

  • 4 ounces ginger root about 8-inch piece
  • 2 limes
  • 1 1/2 cups granulated sugar
  • 1 cup water

For the ginger-lime sparklers:

  • 2 tablespoons ginger-lime syrup
  • 2 teaspoons fresh lime juice
  • Brut sparkling wine or champagne
  • Lime slices or wedges for garnish

Instructions

For the ginger-lime syrup:

  1. Scrub and rinse ginger and cut into 1/4-inch rounds. Use a vegetable peeler to remove zest from limes.
  2. Combine sugar and water in a small or medium saucepan. Cook until sugar dissolves, stirring occasionally.
  3. Add ginger and lime zest. Bring to a simmer then remove from heat. Set aside for 1 hour.
  4. Strain syrup into a container. Discard ginger and lime zest.
  5. Store syrup in a sealed container in the refrigerator for up to 3 months.

For the ginger-lime sparklers:

  1. Place 1 tablespoon syrup and 1 teaspoon lime juice in each of two champagne flutes.
  2. Add sparking wine to each flute. Garnish with lime slices or wedges if desired.
