You know what I haven’t had in ages? Cinnamon toast. Why I’m bringing it up is simply because I was staring at the screen with a serious case of writer’s block. Here I sit thinking about cinnamon and cookies and the holidays. Suddenly “poof” cinnamon toast popped into my mind. I started remembering the smell of white bread, butter, sugar, and cinnamon toasting in the oven. What does it have to do with Cinnamon Sugar Cookies? Oh, not much other than a few common ingredients.

So why did I bake the cookies? It’s time again for Creative Cookie Exchange. Plus the holidays have pretty much arrived. Thanksgiving will be here in a matter of days. Christmas would not be the same without cookies. They are such a wonderful homemade gift too. So be warned I may be sharing several cookie recipes in the coming weeks.

Oh, and can I stack cookies or what? Yes, I had a big time playing with my cookies. I wanted to do something tall and yet different than the usual stack. I’m surprised it worked. What is amazing to me is that I carried the stack from the kitchen to my sunroom to take photos. Well, except for the top cookies. Those went on at the end. Not a single cookie fell in the whole process. It was my lucky day.

How are cinnamon sugar cookies? They are buttery with warmth of cinnamon, sweetness of sugar, slight caramel flavor of brown sugar, and a touch nutty with pecan edges. The texture is slightly crunchy. They can be crunchier or crispy if baked a little longer.

These are slice and bake cookies. Make the dough one day and then slice it up and bake it the next. It’s a simple sugar cookie dough with added cinnamon. It is shaped into a log and rolled in chopped pecans. You could substitute your favorite nut for the pecans. Yet cinnamon and pecans seem such a natural combo to me. It is probably because of the spiced pecans I make every year during the holidays.

Cinnamon Sugar Cookies

These slice and bake Cinnamon Sugar Cookies have a slight caramel flavor, nutty pecan edges, and are a snap to make. Bake a batch for family and friends.

Ingredients

  • 3/4 cup unsalted butter at room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup firmly packed light brown sugar
  • 1 egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans

Instructions

  1. Beat butter, sugar, and brown sugar in a large bowl until fluffy.
  2. Add egg and vanilla and beat well.
  3. Whisk together flour, cinnamon, and salt. Add to butter mixture and beat until dry ingredients are just moistened and combined.
  4. Cover dough with plastic wrap and chill for 30 minutes.
  5. Shape dough into a 12-inch log. Roll log in nuts to coat. Wrap in parchment paper and chill for at least 4 hours or overnight.
  6. Preheat oven to 350°F.
  7. Cut log into 1/4-inch slices. Place slices at least 1-inch apart on ungreased cookie sheets.
  8. Bake for 10 to 12 minutes, or until the edges just start to turn brown.
  9. Cool cookies on baking sheet for 1 minute. Transfer cookies to a wire rack and cool completely.

You can definitely stack cookies! And great brains think alike--I loved cinnamon in a slice and bake cookie! Love that you rolled yours in pecans like that--even more festive!
