The morning started with heavy rain. It was a complete downpour. I think what woke me was thunder. It was either that or the sound of water gushing out of downspouts. That day kicked off a string of wet, grey days with a winter chill. There was one thing I wanted more than anything. And that one thing was summer. I longed for shorts, flip-flops, and warm sunshine. Thoughts of going to the market and smelling all the fresh fruit and vegetables filled my head. All I could do was to mix up a sparkling peach cocktail to satisfy a craving for a season long gone.

Peaches are a highlight of summer in the south. Some year’s harvest are better than others. The best are when they are so juicy it is hard to hold them while peeling and slicing. I have to remember to hold them over a bowl to catch every drop. Oh what I would give for a bag of those peaches right now. Sigh. Hopefully this summer will bring one of those superb crops.

Meanwhile winter is at hand. Fortunately peach nectar and frozen peach slices are available. All you have to do is shake the nectar with peach brandy, orange juice, and lemon juice. Pour it over ice in glasses and top it with sparkling wine. Garnish with peach slices. Pretending it is summer while sipping on a sparkling peach cocktail is entirely up to you.

Sparkling Peach Cocktail

Sparkling Peach Cocktail is made with peach brandy, peach nectar, orange juice, lemon juice, sparkling wine, and garnished with peach slices.

Ingredients

  • 2 ounces Peach Brandy
  • 2 ounces Peach Nectar
  • 2 ounces Orange Juice
  • 1 teaspoon Lemon Juice
  • 4 ounces brut sparkling wine chilled
  • Peach slices for garnish

Instructions

  1. Shake brandy, nectar, orange juice, and lemon juice with ice and strain into 2 glasses filled with ice cubes.
  2. Top with sparkling wine and garnish with a peach slice.
