Summer arrived with all its glory. It sure did bring some heat too. The mild spring was such a joy this year and I miss it already. Now sweltering days are ahead for the next few months. The heat brings a desire for cool treats. Ice cream, frosty cold cocktails, and chilled desserts satisfy those cravings. Citrus and berry flavors are more popular because of using seasonal fruit. One of them is what I used to make these tasty little key lime pie bites.

Little things seem to be a common theme here lately. There is something about small things that catches my attention. I adore tiny flowers. It amazes me how much beauty can be packed into such a teensy blossom. The same goes with food. A mini tart catches the eye and you want to reach out and grab one right away. It is difficult to stop with one though. My brain says one and for some reason my hand picks up at least three.

Key Lime Pie Bites are great for entertaining. They are one of those easy and quick to make crowd pleasing desserts. Tart and sweet, creamy yet fluffy filling is inside flaky shells. Mix it, pipe it into pre-made fillo (or phyllo) mini tart shells, and you are done. Garnishing is optional however you might as well put all those key limes to good use. And the garnish makes them prettier too.

What treats to you relate to summer? Ice cream always pops to the top of my list because I remember my dad and uncle hand cranking a batch for summer family gatherings. I make Key Lime Pie Ice Cream and many other frozen treats too. I also enjoy sipping on a Lemon Parsley Cocktail and make it using parsley from my garden. These key lime pie bites are something I’ll make often too. I can see them being a big hit at summer parties.

Key Lime Pie Bites

A recipe for Key Lime Pie Bites, little tarts made with fresh key limes, cream cheese, condensed milk, cream and fillo (or phyllo) mini tart shells.

Ingredients

  • 4 ounces cream cheese at room temperature
  • 2/3 cup sweetened condensed milk
  • 1 teaspoon grated key lime zest
  • 1/3 cup key lime juice
  • 1/2 cup heavy whipping cream
  • 3 packages mini filo shells 15 count each
  • Key limes for garnish optional

Instructions

  1. Beat cream cheese, condensed milk, zest, and juice in a large bowl until smooth.
  2. Beat heavy whipping cream in a separate bowl until stiff peaks form.
  3. Fold whipped cream into cream cheese mixture.
  4. Pipe or spoon filling into filo shells.
  5. Optional garnish: thinly slice key limes (about 1/8-inch thick). Cut the slices into quarters to make wedges and remove seeds. Place a wedge on top of filling.
  6. Chill until serving. Best served same day as prepared.

Renee, I've been in love with your adorable, elegant key lime pie bites ever since you put the teaser photo up on social media. These are so beautiful! They'd be perfect for any party or gathering. I'd be hovering over them until they're all gone (into my mouth).
